The Ladylux faucets are a great choice for any kitchen, especially with a farm house sink! I would lean toward the 33 759, the 33 755 or the 33893. The best choice for you is, really, the one you like best!
The Grohe 33 759 is the whole faucet. The Nozzle part number is 46298KH0.

The pullout spray is mostly plastic construction to avoid being a scald hazard. The faucet body is stainless steel
Tool G in box 8 of the installation diagram is included and is called a fitting key. I don't believe it is a standard tool but is made specifically for Grohe's installations.
The Grohe 33 759 may have a bad Ceramic cartridge or the aerator may be clogged and need cleaning.

The Grohe 33 759 shouldn't have issues with backsplashes if mounted at least 2.5 inches from the backsplash. Although, if you do not have this much room, the handle can be mounted at an angle instead of directly to the side.

The Grohe 33 759 and the 33759E are the exact same products but the 33 759E uses less water per minute than the Grohe 33 759. It has a flow rate of 1.5 gallons per minute versus 2.5 GPM.
